Classic Italian hot chocolate

minutesThick and creamy hot chocolate that you would be served in any Italian bar and pasticceria, usually with loads of whipped cream on top and, if you’d happen to be very lucky, with not only one but two ice cream wafer rolls to go with it.
Ingredients
550ml milk
20g cocoa powder
30g corn flour
40g sugar
Directions
- Sift the corn flour, sugar and cocoa powder into a mixing bowl. Give them a good stir until they’re well mixed together. Transfer the mix to a pot large enough to contain all the milk.
- Start whisking gently and add half of the milk a little at a time. Whisk until the powders have dissolved. Do not whisk too fast to avoid incorporating too much air = bubbles.
- Add the remaining milk. Gently bring the mixture to boil over low-medium heat. Keep stirring to prevent burning. No burning. That doesn’t taste good. It tastes just like burning.
- Once the mixture starts boiling, keep stirring until it starts thickening. Remember, no burning is key. Thickening should take around a couple of minutes
- Serve in mugs. Add whipped cream and dust with cocoa powder if you like. You can also grate over some dark chocolate. And serve with one or two ice cream wafer rolls.
Notes
- This is quite rich, so you only need a small amount. This recipe makes enough for a small teacup-sized hot chocolate craving for up to four people. Then feel free to adapt as you like.
