Imagine a long, leisurely Italian meal, full of laughter and conversation. The pasta course has been cleared, and the main dish is about to arrive. This is the moment when the ‘sgroppino’ (lemon, vodka and prosecco sorbet) makes its grand entrance. It’s not just a cocktail; it’s a cherished ritual, a pause that refreshes, designed to cleanse the palate and prepare you for the next delicious chapter. Or, when the meal is shorter, it can be the perfect ending to it, right before coffee.
Originated from the Veneto region of Italy, ‘sgroppino’ is a creamy, icy, and utterly delicious drink. It’s one of those rare drinks that feels both indulgent and surprisingly light. The secret lies in its elegant balance – it’s sweet enough to feel like a treat, but the zesty lemon cuts through the richness, leaving you feeling revitalised.
Indeed, its name comes from the Venetian word “sgropin,” which means “to untie a knot,” a perfect metaphor for how it soothes and settles the stomach, acting as the ultimate palate cleanser. In Venice, a good sgroppino is always creamy, and locals often make it with fresh cream or, more commonly, with a creamy gelato alla panna (cream-flavored gelato) to achieve that signature rich texture. But using good lemon sorbet is more ‘traditional’.
However, we know that finding a high-quality lemon sorbet isn’t always easy. But don’t worry—we’ve got you covered with a truly authentic Venetian-style recipe with gelato instead. By using fresh lemon juice and rich cream gelato, you can recreate that perfect, creamy consistency right in your own kitchen. It’s an experience that will transport you directly to a sunny Italian terrace with every sip.
This is our go-to recipe for a last-minute get-together because it’s a showstopper that takes just minutes to prepare. All you need is a blender and a few key ingredients. The best part? You can make a big batch to keep the party flowing, and everyone will be begging you for the recipe.
Sgroppino (Venetian lemon sorbet)
Ingredients for 4 servings
- 200g high-quality gelato alla panna (cream-flavoured gelato)
- 100ml prosecco (chilled)
- 20ml vodka
- 100ml lemon juice
- a sprig of fresh mint or a thin lemon twist for garnish
Directions
- In a large bowl, combine the softened gelato and fresh lemon juice.
- Using a whisk, mix the gelato and lemon juice together until the mixture is smooth and has a creamy, consistent texture.
- Slowly and gently pour the chilled prosecco into the bowl. Gently fold it into the mixture to avoid losing its carbonation. This will create the signature light and frothy texture.
- Add the vodka and give the mixture one final, quick stir to combine.
- Immediately pour into chilled glasses and serve. Enjoy!
